Brewing love for coffee in Jaipur's heart

Jaipur-based restauranteur and chef Dushyant Singh might have grown up with desi flavours of food. However, the burgeoning Indian coffee market is also on his mind so much so that he will soon be giving a coffee masterclass in Gourmet Getaway, his brainchild food festival in the pink city.

"I've been in the coffee business for 10 years now. The market has changed from instant coffee made in homes to specialty coffee brands like CCD and Barista, to specialised gourmet coffee houses like Blue Tokai opening in India," he told life.

"When I first went to Mumbai in young adulthood, I couldn't believe that an entire cafe chain is surviving on just coffee. Now, there are many, of course," added the 'OTH' and 'Rustic by OTH' owner.

Singh explains that although there are rich coffee plantations in the south of India, and it is the fifth-largest coffee producer in the world after Brazil, Vietnam, Colombia, and Indonesia coffee was marketed to India as a luxury product.

"The culture of going out in India has increased manifolds. People want to go out for coffee, and they don't mind paying extra for a good cup of coffee."

Asked which coffees are Ind preferring, Singh says that "we like to drink what makes us feel full milkier, sugary coffees".

After learning coffee basics in Denmark, and even touring many countries for their coffee cultures, the chef finds India a vibrant market for not just international brands, but international coffee variants as well.

He, however, wants the world to be sustainable in coffee production since climate change is making coffee bean plants disappear.

Singh will be talking at Gourmet Getaway, a culinary festival in Jaipur from October 9-13. The gastronomy fest aspires to mark Rajasthan as an exquisite gastronomic destination on the world map.
