Dum ke roat are cooked on dum and they taste sweet and crispy. The roat or cookie kind of delicacies is made from sooji and maida and is prepared on Muharram 2020. These are crunchy from the outside, but soft inside that melts in your mouth. This confectionery has the all goodness in them, including dry fruits, khoa, exotic saffron, and glorious ghee.Recipe of Dum ke Roat:Ingredients: All-purpose flour / Maida – 4 cups Fine Semolina/Sooji – 2 cups Granulated Sugar – 4 cups Almonds – 1 cup Pistachios – 1/2 cup Cashews – 1/2 cup Raisins – 1/2 cup Saffron threads – 2 pinch Cardamom powder – 1 tsp Baking powder – 1 1/2 tbsp Khoya – 1 cup Ghee – 2 cupsWarmed Milk – 2 cups or as needed
Method of preparing Dum ke Roat:
Soak the dry fruits almonds and Pistachios overnight in cold water, next morning peel the skin and slice them neatly.
In a mixer, add the khoya and the warmed milk and blend to a smooth paste.
Take a big mixing bowl, add sooji, maida, sugar, baking powder and cardamom powder, mix all these ingredients. Now add ghee and few nuts that you peeled and mix it well.
Knead to make the dough. Cover this dough and allow it to rest for at least one hour.
Preheat oven to 185 C.
Please make sure that the dough is sticky enough, grease your palm with ghee and flatten them into cookies like shape
Gently press few sliced dry fruits that you have with you on top of each roat
Place the baking sheets in the oven and bake for around 10-15 minutes
Allow it to cool. Now you can remove the baking sheets from the oven
Please store them in an airtight container at room temperature
